Today I’m thankful for the 8 minutes that it takes to bake a Coconut chocolate cookies.
My dear friend Janette makes these incredible chocolate cookies. And after eating the serveral times at our coffee dates I decided to try them on my own. And then inspiration hit. I wondered what they would be like if I added some coconut extract along with the coconut in the cookies. I have a few members of my family that cannot say no to coconut! Goodness was I right. I even got the stamp of approval from Janette.
So I needed a pick me up this afternoon and decided that I would throw a batch in the oven between blogging and getting more food ready for the freezer for Grayson.

Here’s the recipe for those who are interested.
1 cup butter
¾ cup white sugar
¾ cup brown sugar
1 large egg
1 tsp vanilla
1 tsp coconut extract
1 tsp salt
1 tsp baking soda
2 ¼ cup flour
1 cup coconut
1 1/3 cups semi sweet chocolate chips
Blend together and drop onto cookie sheet. Put in 325 degree oven for 8 minutes.
